I've always liked vegetables. They were just the side to my dish, but now that I don't eat meat, veggies are the main event, and man, do I love vegetables!
As a kid, we had a huge garden with all sorts of vegetables. As I got older, and especially when I started touring, I got away from eating as many veggies and I ate very meat heavy dishes. On the road, it's hard to find vegetables, even today. Just last week I was in the airport, and it was really hard to get my hands on any fresh cooked vegetables. Since going vegan, I've really upped my vegetable cooking game. One of my favorite ways to prepare veggies is roasting!
For this particular tray of vegetables, I've roasted:
Wash and cut the veggies to the size you like. Toss in oil with seasoning. I like pepper, salt, garlic, and even a little bit of nutritional yeast. Bake at 400 degrees for 20-30 mins depending on how well the potatoes are done. Enjoy!
