Hey Kinfoke! I love chocolate and one of my favorite treats has always been donuts, especially cake donuts. Y'all already know that I love oats and these donuts have lots of fiber and healthy fat to fuel your busy day.
Vegan, gluten-free, and oil-free!
Here's a peak at me whipping up these bad boys.
Here's the recipe:
1 cup of pitted medjool dates
¼ cup tahini
½ cup plant milk (click for banana milk recipe)
1 tsp vanilla extract
½ cup oat flour
¼ cup almond flour
¼ Cup carob powder or cacao powder
¾ tsp baking powder
¼ tsp salt
Optional Glaze:
1 cup pitted Medjool dates
1/2 cup hot water
2 tbsp cacao powder
2 tsp tahini
¼ cup plant milk
1/4 teaspoon salt
Optional: Crushed pistachios or other preferred nut topping. Try shredded coconut or an agave drizzle. Be creative!
INSTRUCTIONS
Preheat oven to 350 F.
Combine soft pitted medjool dates, tahini, vanilla extract, and water in high-speed blender Add carob or cacao powder and process again until smooth, scraping down the sides
In a bowl combine flours, carob or cacao powder, baking powder, and salt.
Add blended wet mixture to your dry mixture. Mix to combine.
Add to donut pan and bake for 20-25 minutes. Remove and cool on rack.
