There is one place in Cancun, Mexico that has what we need, and little did I know the owner would become a friend.
We love Mexico. It's like a second home to us. Recently, we went down to Cancun to revisit our friends from SMO on the Go Episode 4. But this time, our diet is way different. If you watch the SMO on the Go episodes in 2021, it's crazy to see us back in 2019 eating meat!
SB has even given up her beloved cerveza and tequila, so going to Mexico this time was a little different. Before going, SB did some research to see if there would be any vegan options near our spot. We were shocked to find there are MORE vegan options available in Cancun than there are where we live. Here, we have to go nearly thirty minutes to get to our favorite vegan spot Juicy's, but in Cancun, there were ten options within thirty minutes from our casa. We stumbled upon a place called The Pink Coconut. SB messaged the Whatsapp contact and asked for the menu. She explained our story and she was told to be sure we came by. A week later, we stopped in The Pink Coconut to celebrate SB's 35th birthday and my 6th rebirth day. If you read the birthday blog, you'll know my heart surgery was on March 12, 2015, which so happens to be SB's birthday. Every year since we've met, we celebrate together to commemorate her birth and my rebirth.
I ordered the vegan pizza, which was phenomenal. SB had the enfrijoladas. We both started the morning with juice, a Wake and Bake for SB (celery juice) and a Pineapple Express for me.
We were pleased to meet the owner, Julio, a likeminded individual with a passion for plant-based eating and MUSIC! It turns out, Julio is also a music producer! After getting to know one another, we realized we have a lot in common. We were invited to check out his studio and listen to his new project. He is a very talented artist all around. I'm thankful for Julio's hospitality and friendship.
